However, for simplicity, many people simply tip on the final total, which results in a slightly larger (and much appreciated) tip for the server.

When splitting a bill among a group, it is generally considered polite to split the total evenly if everyone ordered roughly the same amount. If one person ordered a $50 steak and cocktails while another ordered a $15 salad and water, it is better to itemize the bill.
